good looks and health, or, you can choose to arrest it’s
development. Here’s a very important piece of information
- the
refrigerator is to tomatoes what oil is to water. They don’t
mix!
It’s true. Refrigerate a tomato and you can kiss its flavor
goodbye.
Conduct your own experiment. Buy two vine-ripened tomatoes -
keep one at room temperature and refrigerate the other. In less
than a day, the room temperature tomato will have kept its fragrant
aroma and rich taste; the refrigerated tomato will have lost
its
luscious texture and be far less flavorful. Which tomato would
you
choose? Remember, this wonderful fruit was enjoyed for centuries
before the first icebox was invented.
What you should do with a partially eaten tomato? Like any other
fresh food, once opened, it should be refrigerated. Of course,
tomatoes are so good for us and so low in calories, there’s
really
no excuse for having leftovers.
